Rabbit and Ham Pie
Nobody can resist a good pie. Local wild rabbit & gammon from free range Devon pork make this the perfect winter warmer. Prepare it in advance and put in the oven ready to return to after a Sunday...
Ingredients
- 1 wild rabbit – skinned & jointed
- 500g diced green gammon ham
- 1 onion peeled & cut in half
- 1 whole carrot
- 1 celery stick
- 1 bay leaf
- 10 white peppercorns
- 125g butter
- 125g plain fl our
- 2 tbsp coarse grain mustard
- 100ml double cream
- Chopped parsley
- Salt & pepper to taste
- 1 egg beaten with an equal
- quantity of milk
- 500g pack pu pastry
