• 1 cup sweet onion, finely diced
• ½ cup carrot, peeled and finely diced
• 4 Marcangelo sweet Italian sausages, casings removed
• 2 Tbsp. chili powder
• 2 tsp. ground cumin
• 1 tsp. fresh or dried oregano
• ¼ tsp. ground cinnamon
• 1 tsp. kosher salt
• ½ tsp. freshly ground black pepper
• 28 oz. can fire-roasted diced tomatoes
• ½ cup red wine (optional)
• 1 cup chicken or beef stock
• 19 oz. can red kidney beans, drained and rinsed
