• ½ Red Onion, finely chopped
• 2 tbsp mayonnaise
• 1 tbsp artichoke hearts, chopped
• 1 tsp capers (optional)
• 2 tsp olive oil
• Salt and black pepper to taste
• 4 slices of bread
• 4 slices Cheddar or Mozzarella cheese
