• 1 large cauliflower
• 2 large sweet potatoes
• 2 tbsp vegetable oil
• salt and pepper to taste
• 100 g Apetina® Original White Cheese In Brine with green olives & garlic
• 1 tbsp flat-leaf parsley, chopped
• 1 fresh jalapeño chilli, finely chopped
• 2 garlic cloves, crushed
• 1 tbsp fresh coriander, chopped
• 1 tbsp oregano, chopped
• 1 tbsp red wine vinegar
• 2 tbsp olive oil
