Celeriac Salad with Citrus and fennel - Viva Gourmet
Celeriac salad with fresh citrus is a light and refreshing salad which pops from the simple dressing of 'O' Blood orange olive oil and fresh citrus juice.
Ingredients
- 3 tblsp , “O” Olive Oil – Blood Orange
- generous sprinkle Sea Salt – Maldon Sea Salt Flakes
- Fresh Spinach, 6 cups rinsed
- Grated or julienned celery root, 1 medium
- small fresh fennel bulb (or 1/2 larger one), about 1 cup sliced
- fresh citrus sections , blood orange, navel or ruby red grapefruit, juice reserved
- champagne vinegar ( optional)
- slivered almonds- optional- 1/4 cup
