This is a very fine light tasting cheesecake. A great alternative to all of those big blocks of Philly's finest.
Ingredients
- 1/2 cup unsalted butter
- 3 tablespoons cornstarch
- 3 tablespoons all-purpose flour
- 16 ounces cream cheese
- 15 ounces whole milk ricotta cheese, liquid drained
- 1 1/2 cups granulated sugar
- 4 large eggs
- 1 1/2 tablespoons fresh lemon juice
- 1 tablespoon vanilla
- 2 cups sour cream
