• 3 tbls dried greek oregano
• 1/4 cup finely chopped fresh mint
• juice and zest from 2 large lemons
• 200 ml extra virgin olive oil
• 2 tbls balsamic vinegar
• 1 tbls sherry vinegar
• 6 cloves of garlic, finely chopped
• few grinds of black pepper
• about 2 tsp of kosher salt
