- 2 lbs of chicken thighs (will work just as well with chicken breast)
- 1 egg
- 2 TBSP mayo
- 2 tsp yellow mustard (dijon will work, too)
- 1/4 tsp smoked paprika
- 1/2 tsp sweet (regular paprika)
- 1/2 tsp salt
- 1-1/2 TBSP flour
- 1 TBSP clarified butter
- 2 TBSP avocado oil (or any liquid oil of your choice)
- 1 cup bread crumbs (panko will work, too.)
