Ingredients

• 1/4 cup chopped celery
• 1/2 cup chopped onion
• 1/2 lb mushrooms (sliced)
• 1 Tbsp vegetable oil
• 2 10.5 oz cans cream of mushroom or cream of chicken soup
• 1/2 cup milk
• 1 10 oz pkg frozen chopped broccoli (thawed and drained)
• 2 cups cooked white rice
• 2 cups cooked chicken (cut into pieces)
• 1 cup processed cheese such as Velveeta (cut into cubes)
• 1 stick butter (melted)
• paprika (to taste)
• 1 8 oz pkg shredded Cheddar cheese
