Colcannon - an Irish Halloween Classic – Paddy the Baker

Ingredients

• 1-2 kg potatoes (yellow flesh like a desiree or dutch gold is best)
• 4 pieces bacon
• 6 Spring onions
• 4 cloves of garlic
• 150mL of cream
• 2 tablespoons all-purpose flour
• 2 1⁄2 cups lamb or vegetable stock
• salt & freshly ground black pepper
• parsley chopped
• chives chopped
• 2 to 3 cups of tightly pressed cabbage and kale
