Ingredients

• 1 butternut squash, about 3 lb (1.4 kg), peeled, seeded and cubed
• 1 onion, finely chopped
• 1 tbsp (15 ml) vegetable oil
• 1 tbsp cornstarch
• 1 can (10 oz/284 ml) concentrated chicken broth
• 1/4 cup (60 ml) 35% cream
• 1/2 recipe extra tender pork meatballs, cooked and hot
• 3 tbsp flat-leaf parsley leaves
• 3 tbsp Parmesan cheese, freshly grated
