- 1 (0.25oz) package (7g) or 2 1/4 teaspoons Red Star Quick Rise Yeast
- 3 tablespoons granulated sugar
- 2 large eggs, divided
- 2 1/2 cups all-purpose flour, divided (plus more for dusting the work surface)
- 3 tablespoons olive oil
- 1/4 teaspoon table salt
- 1/2 cup toasted coconut flakes
- 2 1/4 cups plus 2 tablespoons powdered sugar
- 3 tablespoons water
