Classic Shakshuka

Ingredients

• 2 tablespoons olive oil
• 1 onion, julienned
• 1 red bell pepper, julienned
• 2 garlic cloves, minced
• 2 teaspoons smoked paprika
• 1 teaspoon ground cumin
• ½ teaspoon chili powder
• ¼ teaspoon red pepper flakes (optional)
• 1 28-oz can of whole peeled tomatoes, with their juices
• 1 cup of fresh spinach, chopped
• 4 extra large eggs (can increase to 6 if desired)
• Salt and pepper to taste
