Ingredients

  • 1 Tbsp. extra virgin olive oil
  • 1 yellow onion (chopped)
  • 1 green bell pepper (chopped)
  • 3 stalks celery (chopped)
  • 2 cloves garlic (minced, about 1 tsp.)
  • 1 cup dry quick-cooking brown rice
  • 1 tsp. ground cumin
  • 1/4 tsp. black pepper
  • 1 bay leaf
  • 2 cups reduced-sodium chicken or vegetable broth (or use any variety)
  • 29 - 30 oz. canned black-eyed peas (with their liquid, or use 1 1/2 cups home-cooked beans for every 15 oz. can)
  • 15 oz. diced tomatoes (with their liquid)
  • 4 1/2 oz. canned chopped green chilies (with their liquid)
