- 3 stalks celery (chopped)
- 2 cloves garlic (minced, about 1 tsp.)
- 1 cup dry quick-cooking brown rice
- 1 tsp. ground cumin
- 1/4 tsp. black pepper
- 1 bay leaf
- 2 cups reduced-sodium chicken or vegetable broth (or use any variety)
- 29 - 30 oz. canned black-eyed peas (with their liquid, or use 1 1/2 cups home-cooked beans for every 15 oz. can)
- 15 oz. diced tomatoes (with their liquid)
- 4 1/2 oz. canned chopped green chilies (with their liquid)
