- 5 sprigs fresh thyme, tied together with kitchen twine
- 1 tbs neutral oil such as grapeseed or safflower
- 1 tbs olive oil
- 2 tbs stoneground mustard
- 2 tbs unsalted butter
- 8 thick slices of hearty white bread
- ½ cup shredded cheddar cheese
- ½ cup shredded colby-jack cheese
- ¼ cup minced fresh parsley
- ½ tsp sugar
- kosher salt
- black pepper
