Chipotle Sauced Tostadas

Ingredients

• 6 corn tortillas fried flat until crisp
• 2 chicken breasts
• 4 peppercorns
• 1 clove Garlic crushed
• 1/4 medium white onion chopped
• 4 cups well seasoned chicken broth
• 1 chile chipotle (from can)
• 1 clove Garlic minced
• 2 large cans tomato puree
• 1/8 teaspoon ground pepper
• 1/2 teaspoon salt or to taste
• 1 lime juiced
• 1 teaspoon Salt
• 3 pinches dried oregano
• 1 cup raw carrot grated
• 1 cup green cabbage shredded
• 2 cups lettuce thinly sliced
• 2 medium potatoes boiled, peeled and grated
• 1 large white onion sliced into thin rings
