• 1 lb ground organic chicken
• 1 medium finely chopped onion
• ¼ cut walnuts chopped in a food processor
• 4 minced fresh garlic cloves
• 1 cup bread cut in small cubes
• 2 apples chopped into ¼ inch pieces, include peels
• 2 tbsp finely chopped fresh dill
• zest of one lime
• 1 egg, beaten
• ¼ tsp kosher salt
• ½ tsp ground black pepper
• ½ tsp granulated garlic
• ½ tsp ground cumin
• 3 tbsp extra virgin olive oil
• ½ cup grated Parmesan cheese
