• 2 sprigs thyme, leaves stripped
• 2 tablespoons all-purpose flour
• 1 cup chicken stock
• 1 tablespoon Dijon
• 5 slices sharp cheddar
• 1/3 cup butter, room temperature
• 1/4 cup parsley, chopped
