Ingredients

• 1 x 320g all-butter puff pastry sheet
• 30g butter
• 2 red onions, sliced into thin wedges
• 1 tbsp light soft brown sugar
• 1 tbsp sherry vinegar
• large thyme sprig, leaves only
• 400g cooked beetroots, cut into wedges (vac-packed are fine)
• salt and black pepper
• thyme leaves
• a few slices of goats’ cheese (optional)
