Ingredients

• 250 g flour
• 250 g butter
• 250 g caster sugar
• 4 medium eggs
• For the filling:
• 150 g black currant jam
• 250 g butter (soft)
• 500 g icing sugar
• 1 TSP vanilla extract
• A few drops of black food colourgel
• For the icing:
• 150 g butter (soft)
• 300 g icing sugar
• ½ TSP vanilla extract
• 1 small tube of black food colour gel
