Spinach Balls - Crossroads Community Farm

Ingredients

• 1 to 2 bags of spinach from Primrose, wilted (i.e steamed very briefly)
• 1 cups Italian-style seasoned bread crumbs
• 1/2 cup grated Parmesan cheese
• 1/4 cup butter, melted
• 2 small green onion, finely chopped
• 2 eggs, lightly beaten
• salt and pepper to taste
