• 5 cups frozen hash browns (thawed)
• 1 cup sweet onion (diced)
• ½ cup red bell pepper (diced)
• 2 cups shredded cheddar cheese (divided)
• 10 large eggs
• 2 tbsp Dijon mustard
• 1 tsp hot sauce
• 1 cup half and half
• 1½ tsp salt
• 1 tsp ground black pepper
• 1 14 oz. package Hillshire Farms Smoked Sausage (sliced thin)
• 1 tsp fresh chives (chopped)
