Lentils with Smoked Sausage and Carrots

Ingredients

• 2 Tbsp. olive oil
• 1 onion, chopped
• 3 cloves garlic, minced
• 4 carrots, peeled, halved lengthwise and cut into 3/4 inch chunks
• 1 lb. lentils (about 2 1/3 cups), rinsed
• 1 quart water
• 1 1/4 tsp. salt
• 1 bay leaf
• 1 tsp. dried thyme
• 1 lb. smoked sausage, cut diagonally into 3/4 inch slices
• 3 Tbsp. chopped fresh parsley
