Ingredients

• 2 Tbsp. Olive Oil
• 2 Cloves Garlic, minced
• 1 Medium Onion, chopped
• 1 1/2 tsp. Ground Ancho Chile Powder
• 3 Cups Home-made vegetable or chicken stock (or low-sodium, store bought)
• 5 Cups Cubed, Peeled Sweet Potatoes (about 2 large)
• 1 1/2 Cups Milk (1% or 2%)
• 1 1/2 tsp. Cornstarch
• 3/4 Cup Plain Yogurt (not fat-free)
• 1/4 tsp. Salt
• Fresh Cracked Pepper to taste
• 1 tsp. Grated Lime Zest
• 2 Tbsp. Lime Juice
