Ingredients

• 8 oz (227 g) white mushrooms, sliced
• 1 onion, thinly sliced
• 2 tbsp (30 ml) butter
• 2 Italian sausages, mild or spicy, casing removed
• 1 loaf Belgian bread, about 1 lb (454 g), preferably day old
• 5 eggs
• 1/2 cup (125 ml) milk
• 4 oz (115 g) grated Emmenthal cheese
• 1/2 tsp (2.5 ml) dry mustard
• Salt and pepper
