Ingredients

• 2 cups all-purpose flour
• 1 1/2 teaspoons ground cinnamon
• ½ teaspoon ground ginger
• 1 teaspoon baking powder
• 1/2 teaspoon fine sea salt
• 1/3 cup vegetable oil or melted butter (or melted coconut oil)
• 2/3 cup (packed) dark or light brown sugar
• 2 large eggs
• 1 cup unsweetened applesauce*
• 1 teaspoon vanilla extract
• 3/4 cup buttermilk
• 1 large tart apple, peeled, cored, and cut into small pieces
• ½ cup toasted pecan pieces
• 12-14 strips of bacon, well cooked, drained and chopped
• 1/3 cup maple syrup plus extra for drizzling
