Zucchini Corn Cakes - A better choice!

Ingredients

• ½ Cup Yellow cornmeal, organic if possible
• ¼ Cup Spelt flour*
• ¼ tsp Baking soda
• ½ tsp Cumin, ground
• ¼ tsp Salt
• ¼ tsp Pepper
• 1 Zucchini
• 1 Egg
• ¾ Cup Buttermilk, or milk of choice
• 1 ½ Tbsp Olive oil
• ½ Cup Corn kernels
• 1 Spring onion, white and green part finely chopped
• Butter - to cook
