Chilli Beef Casserole | Simon Howie Recipes

Ingredients

• 4 Simon Howie ox cheeks
• salt and freshly ground black pepper
• 2tbsp olive oil
• 1 onion, peeled and chopped
• 2 garlic cloves, peeled and chopped
• 1 large red pepper, deseeded and chopped
• 400g can chopped tomatoes
• 300ml (1/2pt) red wine or beef stock
• 2tsp ground cumin
• 1-2tsp dried chilli flakes + extra to serve
• 1tbsp light brown sugar
• 400g can kidney beans in water, drained and rinsed
