Sticky Chipotle Aubergine Sandwich

Ingredients

• 2 tbsp chipotle paste
• 1.5 tbsp tomato paste
• 3 sundried tomato, finely chopped
• 2 garlic cloves
• 1 tbsp maple syrup
• 1/4 orange, juice
• 1/2 tsp ground cumin
• 1 tsp red wine or sherry vinegar
• 50ml olive oil
• 2 aubergines
• 1-2 tbsp olive oil
• to taste salt and black pepper
• 175g shredded white cabbage
• a pinch salt
• 15g fresh coriander, roughly chopped
• 1 jalapeño, thinly sliced
• 2 spring onions, thinly sliced
• 1/2 lime, juice
• 1 tbsp olive oil
• to taste salt
• 1 tbsp mayo
• 1 tbsp green salsa (shop bought)
• 2-4 slices of sourdough bread
• 1/2 avocado (optional)
