Tropical Tomatillo Salsa – Catskill Animal Sanctuary

Ingredients

• ½ lb tomatillos, husks removed, washed and cored
• 1 jalapeño pepper, stem and seeds removed
• 1 red bell pepper, stem and seeds removed
• 3 large cloves garlic, peeled
• 1 large, mango, diced, about 1 cup
• 1 cup diced pineapple
• 3 tbsp fresh lime juice
• ½ tsp salt
• ¼ tsp ground cumin
• ⅛ teaspoon cayenne pepper, optional
• Chopped fresh cilantro, to garnish
