Ingredients

• 2 tbsp olive oil
• 1 onion, finely chopped
• 1 garlic clove, crushed
• ¼ tsp chilli flakes
• 2 x 400g cans chopped tomatoes, blitzed in a food processor until smooth
• 1 tsp caster sugar
• 3 tbsp mascarpone
• 500g ravioli
• small bunch of basil, roughly chopped, plus extra whole leaves to serve
• 125g ball of buffalo mozzarella
• 20g parmesan or vegetarian alternative, finely grated
