Cinnamon & Nut Cupcakes recipe by Theretrokitchen

Ingredients

• 125g butter
• 1 cup castor sugar
• 2 eggs
• 1 teaspoon vanilla essence
• 2 cups flour
• 1 teaspoon baking powder
• 3ml bicarbonate of soda
• ¼ teaspoon salt
• 1 big tin nestle cream soured with 2 tablespoon lemon juice
• 60g chopped pecan nuts
• ½ cup castor sugar
• 3 teaspoons cinnamon powder
• Cream the butter and sugar till light and creamy
• Add in eggs and vanilla essence and beat well.
• Sprinkle balance of the cinnamon mixture over batter
