Aubergine and mozzarella bake Archive
A simple vegetarian bake made with mozzarella and aubergine will out-class any lasagne ready-meal. Serve with crusty bread. This is designed to be a low cost recipe.
Ingredients
- 3 tbsp olive oil
- 1 onion, finely chopped
- 3 garlic cloves, crushed
- 2 x 400g/14oz tins chopped tomatoes
- salt and pepper
- 2 medium to large aubergines
- 1 ball mozzarella, drained and torn into pieces
