Ingredients

• 1 pound pasta, cooked
• 1 green zucchini, diced
• 1 yellow zucchini, diced
• 1 small eggplant, diced
• 1 red pepper, diced
• 1/2 pint cherry tomatoes, halved
• 1 clove garlic, minced
• 1 tablespoon olive oile
• 1 cup cooked, shredded chicken
• 1/4 cup pesto
• 1/4 cup parmesan cheese, grated, plus more for serving
• 1/4 cup 35% cream
• Salt to taste
• Pepper to taste
