Raspberry jelly creams
These raspberry jelly creams are a great make-ahead dessert as they need to be chilled for 4 hours.
Ingredients
- 1 cup frozen raspberries
- 500 gram caster sugar
- 1/4 cup plus 1/2 cup just-boiled water
- 2 teaspoon powdered gelatine
- 300 millilitre double cream or whipped thickened cream
- fresh raspberries, mini meringues (optional), to serve
