Caramelised Apple French Toast with Peach Jam from A Passion for Potatoes by Paul Gayler
This is wonderful with double cream or a good scoop of vanilla ice-cream.
Ingredients
- 250 ml (8 fl oz) full-fat milk
- 1 vanilla pod
- 40 g (1½ oz) unsalted butter
- 1 teaspoon ground cinnamon
- 1 tablespoon brown sugar
- 2 eggs
- 2 Granny Smith apples, peeled, cored and cut horizontally in half
- 4 tablespoons peach jam
- 100 ml (3½ fl oz) dry white wine
- Juice and finely grated zest of 1 orange
- Icing sugar, for dusting
- 100 g (4 oz) caster sugar
- 4 slices of Potato Bread, cut 2.5cm (1in) thick
