• 2 tbsps unsalted butter (30 mL)
• 1 tsp vanilla extract (5 mL)
• 1 tsp ground cinnamon (5 mL)
• 1/4 tsp ground cloves (1 mL)
• 1/4 tsp ground nutmeg (1 mL)
• 1/4 tsp salt (1 mL)
• 3/4 cup chopped pecans, divided (175 mL)
• 1/2 cup shredded carrots (125 mL)
• 1/2 cup sweetened shredded coconut (125 mL)
• 1/4 cup finely chopped dried pineapple (60 mL)
• 1 tbsp coconut oil (15 mL)
