Ingredients

  • 500g of chicken wings
  • 2 tsp ginger-garlic paste
  • 1/2 tsp turmeric powder
  • 2 tbsp of distilled vinegar
  • 2 tsp Kashmiri chilli powder
  • 1 green chilli, finely chopped
  • 1 tsp black pepper, ideally from Malabar, coarsely ground
  • 1 tbsp of ginger, chopped
  • 100g of rice flour
  • 100g of cornflour
  • salt, to taste
  • vegetable oil, for deep-frying
  • 2 sprigs of curry leaves
  • 1 red chilli
  • 20g of freshly grated coconut
  • 2 tbsp of coriander leaves, chopped
  • 5 baby pickled onions, pink or white
  • 8 garlic cloves, peeled
  • 50g of desiccated coconut
  • 1 tsp sesame seeds
  • 1 tbsp of roasted peanuts
  • 2 tsp red chilli powder
  • 1 tsp ground coriander
  • 1/2 tsp tamarind paste
  • 1 tsp vegetable oil
  • 3 large tomatoes, chopped
  • 5 whole dried kashmiri chillies
  • 1 tbsp of chana dal
  • 2 garlic cloves, peeled
  • 1 pinch of turmeric
  • 1 tbsp of vegetable oil
  • salt
  • 1/4 tsp urad dal
  • 1 sprig of curry leaves
  • 1/4 tsp black mustard seeds
  • 1 pinch of asafoetida
  • 1 dried chilli, broken
