Ingredients

• 3 Hass avocados
• 100 g mini cucumbers, cut in lengthwise and sliced
• 125 g grape tomatoes, cut in half
• 100 g fetta, crumbled
• 60 g Kalamata olives, sliced
• 1 tbsp small mint leaves
• 1 tbsp pine nuts
• 2 tbsp micro herbs
• 1 tbsp caramelised balsamic vinegar
• Olive oil, to drizzle
• Salt and pepper
