Banana and Chocolate Chip Cake from Food for Friends by Levi Roots

Ingredients

• 140 g (5 oz) soft light brown sugar
• 115 g (4 oz) butter, softened, plus extra for the tin
• dried banana chips or roughly chopped pecans, to decorate
• 170 g (5¾ oz) unsalted butter, slightly softened
• 340 g (11¾ oz) soft light brown sugar
• juice of 1 lime
• ½ tsp bicarbonate of soda
• 35 g (1¼ oz) chocolate chips
• 25 g (1 oz) pecans, roughly chopped
• 3 ripe bananas, mashed
• 4 tbsp soured cream
• 225 g (8 oz) plain flour, sifted
• 1 tsp baking powder
• 2 tsp vanilla extract
• 2 eggs, lightly beaten
• zest of 1 unwaxed orange, finely grated
• ½ tsp ground cinnamon
