• 1/2 pound corned beef cut into slices
• 2 1/2 tbs unsalted butter
• 2 cups shredded potatoes
• 1 onion, diced
• 1 red bell pepper diced
• 2 cloves garlic chopped
• 1/2 tsp thyme chopped
• Salt and Pepper
• 2 eggs
