I got this off a website but modified it because I don't like to use shortening in my cooking. However shortening could be substituted for the Butter
Ingredients

- 1/4 cup oil
- 2 cups sugar
- 5 large eggs, separated
- 1 tablespoon vanilla extract
- 1 cup rice flour
- 1/2 cup potato starch
- 1/4 cup tapioca flour
- 1 teaspoon xanthan gum
- 1 teaspoon baking soda
- 1 1/2 teaspoons baking powder
- 1 cup buttermilk
- 1 cup flaked coconut
