Ingredients

• 60ml coconut oil
• 230ml unsweetened plant-based milk
• 2 tbsp lemon juice
• 6 tbsp maple syrup (if honey is used, it needs to be very light in flavour)
• 1 tsp vanilla extract
• 150g ground almonds
• 150g self-raising flour
• 2 heaped tsp baking powder
• 1⁄4 tsp bicarbonate of soda (baking soda)
• 2 tsp matcha powder to taste
• 400ml tin of full-fat coconut milk
• 2 tbsp Frutteto Raspberry spread
