Ingredients

• 1 tbsp olive oil
• 200 g bacon, roughly diced
• 500 g mushrooms, sliced
• 1 tsp minced garlic
• 750 ml chicken stock (at room temperature)
• 250 ml thickened (whipping/heavy) cream
• ½ tsp freshly cracked black pepper
• 250 g spaghetti (see note 1 for other pasta options)
• 125 ml boiling water (directly from the kettle)
• 1 spring onion (scallion), finely sliced
• 100 g freshly grated parmesan
