Bread and Butter Pickles

Ingredients

• 4 pounds (1.8 kg) pickling cucumbers, sliced thinly
• 1 large yellow onion, thinly sliced
• 1 large green bell pepper, seeded and thinly sliced
• 1/4 cup (50g) pickling salt
• 1 cup (200g) ice
• 3 cups (700 ml) white vinegar (5% acidity)
• 1 1/2 cups (300g) granulated sugar
• 1 tablespoon (15 ml) mustard seeds
• 1 teaspoon (5 ml) celery seeds
• 1/2 teaspoon (2.5 ml) ground turmeric
• 1/4 teaspoon (1.25 ml) ground cloves
• 1/4 teaspoon (1.25 ml) ground ginger
