Creamy Celery Soup (Without Cream)

Ingredients

• 4 tbsp olive oil (or butter)
• 1 large onion (diced)
• 2 garlic cloves (smashed)
• 6 cups chopped celery (including leaves and stems)
• 2 cups chopped cauliflower
• 5 cups water (vegetable or chicken broth)
• 1 dried bay leaf or 3 fresh bay leaves (remove before blending if dry)
• 1/2 cup finely chopped green celery leaves (add after cooking)
• 1/2 cup finely chopped parsley (add after cooking)
• 1 tsp salt
• ½ teaspoon pepper
• 1/2 cup parsley
• 1 tbsp good quality hot sauce or harissa
• 1/4 cup olive oil
