Pure apple cake with golden syrup custard
An apple cake with a difference. Sliced apples are coated in a sweet syrup then baked until soft then served with a gorgeous golden syrup custard.
Ingredients
- 1 vanilla bean
- 1 cinnamon stick
- 2/3 cup (150g) caster sugar
- ½ cup (125ml) apple juice
- 2 tablespoons lemon juice
- 80 grams unsalted butter, chopped
- 10 large green apples (2kg)
- 2 teaspoons golden syrup, warmed
- Golden syrup custard
- ½ cup (125ml) milk
- 1 cup (250ml) thickened cream
- ¼ cup (90g) golden syrup
- 4 egg yolks
- 2 tablespoons caster sugar
- ½ cup (120g) mascarpone
