We love sending the kids into school with healthy home baked treats such as this delicious Courguette Muffin. It looks deceptively like a cake.
Ingredients
- 2 bacon rashers, finely chopped
- 1 brown onion, finely chopped
- 2 Courgettes coarsely grated
- 2 cups (300g) self-raising flour
- 1 cup (120g) coarsely grated tasty cheddar
- 2 tablespoons dill, finely chopped
- 2 Eggs, lightly whisked
- 3/4 cup (185ml) milk
- 60g butter, melted
