- 75 grams caster sugar
- 2 teaspoons vanilla bean paste
- 1 cinnamon stick
- 150g 70% dark chocolate, plus extra to serve

- Pinch ground ginger
- Pinch ground cardamom
- 2 tbsp golden caster sugar
