Ingredients

• 6 tablespoons unsalted butter, at room temperature, plus extra for pie dish
• 1 1/2 cups all-purpose flour (can swap 3/4 cup all-purpose flour with 3/4 cup barley flour for a nutty flavor, or 3/4 cup whole wheat or spelt)
• 1 1/2 teaspoons baking powder
• 1/2 teaspoon kosher salt
• 3/4 cup plus 2 tablespoons granulated sugar
• 1 large egg
• 1/2 cup milk
• 1 teaspoon vanilla extract
• 1 pound fresh strawberries, hulled and halved or quartered if they are very large
• Whipped cream, for serving
